Domaine Ortola is one of those pearls of the new Languedoc, which is gaining in reputation both for the quality of its wines, but also for the preservation of the environment. Ode à la Main is the most prestigious wine produced by the estate, with vines having an average age of 40 years, manual harvesting, manual pigeage (action of stirring the grapes during skin maceration to extract the aromas), no use of sulfites during the fermentation process and aging in new oak barrels for one year. This is meticulously cared for, and all biodynamically!
The blend is 50% Syrah, with 25% Carignan, 20% Mourvedre and 5% Grenache and Mourvèdre, which gives aromas of red and black fruits (cherry, blackcurrant, blackberry) and spice (pepper). Aging in new oak barrels for 12 months adds complexity and aromas of toasted bread. The freshness is persistent, the tannins are silky, and the 14% alcohol is incredibly well integrated.
This great wine is ready to drink today, but also has good aging potential, and can evolve towards beautiful aromas of aging. Amazing value for money! This wine will go perfectly with grilled meats, couscous, lamb tagine with apricots.
