Clos du Centurion is made from grapes grown in 4 hectares in the Corbières-Boutenac sub-appellation. The town of Boutenac is an area known as “The Golden Crescent.” This swath of land is one of the sunniest in the appellation of Corbières, enjoying south-southeast exposure, and protection from the cold, northeast winds by a large 500-hectare forest. The cooler sea breezes from the Mediterranean help this sun-soaked terroir achieve balance as well. Winemaker Bruno Laboucarié believes that great wines are made in the vineyard and less in the cellar. He farms the land sustainably and keeps treatments to a minimum. Silica, clay, and limestone dominate the subsoil of Fontsainte’s vineyards.
Grapes are all hand picked. The core of the blend is Carignan, which comes from one hundred year old vines and vinified separately by whole cluster fermentation in order to soften the tannins and elevate the fruity character. The Grenache and Syrahare vinified more traditionally, under controlled temperatures. The wine ages in French oak barrels for up to 12 months.
The nose opens with aromas of cherry compote and wild flowers, followed by caramelized apple and spices such as vanilla and cinnamon. Notes of freshly roasted almond and cocoa bean are then revealed The palate is warm and rich, with elegant tannins and the density of the fruit combine voluptuously, giving a perfect balance. Lots of elegance ending with notes of roasted game and pine resin.
