Description

Made from 85% Sangiovese (locally called Prugnolo Gentile) with Colorino and Canaiolo grown at 350 metres above sea level. Vineyards employ both cordon and Guyot vine training to manage ripeness and yield. Yield is low at just 35 hl per ha, ensuring high quality and concentrated fruit. All vinifications are done using native (wild) yeasts, which tend to produce more complexity that widely available commercial yeasts. There is a short maceration at controlled temperatures to extract colour, flavour and tannin from the grape skins. Aging is done for 24 months in large Slavonian oak barrels followed by further aging in bottle.

On the palate, it’s dry and firmly structured, with chewy, persistent tannins and vibrant acidity that carry the wine through a long, mineral-tinged finish. There’s a distinct sense of wet stone beneath the fruit and earth, lending both tension and depth. It’s an ideal match for grilled bistecca, herb-rubbed lamb, wild mushroom risotto, or aged Pecorino Toscano — and it also shines with vegetarian dishes like eggplant involtini or a rich porcini and lentil stew.
