Verdejo

erdejo is a white grape variety native to Spain, particularly associated with the Rueda wine region in the heart of Castilla y León. Known for its vibrant acidity and aromatic profile, Verdejo has long been a staple in Spanish winemaking, though its popularity has soared in recent decades. The grape thrives in the high-altitude vineyards of Rueda, where the hot days and cool nights allow it to preserve its natural freshness and citrusy character. Verdejo is prized for producing wines that are aromatic and refreshing, often with notes of green apple, lemon, and fennel, alongside a distinctive herbal quality that sets it apart from other white wines. Its versatility also allows it to be made into both crisp, young wines and more complex, barrel-aged versions.

Verdejo is well-suited to the dry, continental climate of Rueda, where it ripens late, ensuring it retains its refreshing acidity even as it develops flavor complexity. However, this late ripening can also make the grape susceptible to frost, especially during the early stages of growth. Verdejo’s vigorous growth requires careful vineyard management to avoid overcropping, which can dilute the wine’s flavor intensity. Wines made from Verdejo are known for their lively acidity and fruit-forward character, with typical aromas of citrus, green herbs, and sometimes a slight nuttiness. The texture can range from crisp and clean to more round and layered, particularly when the wine undergoes lees aging. Verdejo wines are excellent with a wide variety of dishes, from seafood and grilled vegetables to fresh salads and tapas, making them a versatile choice for many occasions.
